New Potatoes Recipes. An Easy-to-Make, Healthy Family Treat
New potatoes are on the market right now and they can make such a healthy treat for your family in a number of ways. You can bake them, use them in salads or stuff them with meat, cheese and many delicious vegetables. Here are three new potatoes recipes for a regular dinner and, why not, a festive occasion.
New potatoes recipes. Baked
You can bake new potatoes very easily as you don’t have to peel them. This is a very simple recipe for baked potatoes with green garlic and dill.
Ingredients:
- 1 – 2 kilos new potatoes
- 2 – 3 green garlic plants
- 1 – 2 cups of water
- a bunch of dill
- salt
- pepper (optional)
- 1 – 2 spoons olive oil
Preparation:
Wash the potatoes, scrubbing them with the rough side of a clean kitchen sponge. Put them in a tray, whole or cut, add water, oil and salt and let them bake at 350 degrees.
After around 20 minutes, take them out and add the green garlic, minced, mix them up and put the tray back into the oven.
The delicious odor and the golden crust will let you know when they’re ready. Take them out of the oven and sprinkle over the dill.

New potatoes recipes. Salad
Ingredients:
- 500 gr new potatoes (choose small ones)
- 200 gr bacon
- 50 gr green olives, sliced
- 1 bunch of scallions
- 1/2 bunch of dill
- 1 bunch of parsley
- 1 tbsp olive oil
- 1 tbsp vinegar
- salt, pepper
Preparation:
Wash and put the potatoes to boil, with a little salt, for about half an hour. Then peel them and put them in a bowl.
Lightly cook the bacon, chopped, in a pan. Dice the scallions and add a bit of salt to it. Spread it over the potatoes, then add the bacon, the olives, the greens, minced, and a little pepper. Mix them carefully and season some more if necessary.
Mix the oil and vinegar with two spoons of sparkling water. Pour this over the salad, mix a bit more and serve.

New potatoes recipes. Stuffed
Ingredients for 4-6 portions:
- 4 large potatoes
- 2 tbsp olive oil
- 1 tsp flaky sea salt
- 3-4 florets of broccoli
- 150 gr bacon cubes
- 1 red onion finely chopped
- 3 tbsp of sour cream
- 50 gr Gorgonzola
- 1 bunch of scallions finely chopped
- 150 gr Cheddar, shredded
- salt and pepper
Preparation:
Wash the potatoes using a clean sponge. Stick a fork in them on the whole surface, then “massage” them with olive oil and flaky salt. Put them in the oven, heated at 400 degrees, directly on the grill and leave them for 35 – 40 minutes.
Take them out, cut them in half and carve them until less than 1/4 inch is left on the peel. Put what you carved out in a bowl and make some mash, add the broccoli (after boiling them in some boiled water with salt and then in very cold water, so they stay green), some salt and pepper and the Gorgonzola. Mix everything up to have an even mash.
Next, add the cream, the minced scallions and the bacon cubes saute with the red onion. Put a spoon of minced scallions aside to decorate at the end. Mix everything once again and you have your filling for the potatoes.
After stuffing the potatoes, sprinkle the shreds of cheese on them, the scallions and maybe some red pepper for color. Put the potatoes in the oven, heated at 400 degrees, for 15 minutes or until you see the Cheddar nicely roasted.
You can have them with a Greek yogurt sauce, spiced up with salt, freshly ground pepper, red peppercorn, a bunch of ramson, some scallion, 2 – 3 garlic cloves.
