Homemade yogurt recipe. Preparation
Heat the milk stirring from time to time so it doesn’t stick to the pot, until it reaches 200 degrees. Than let it cool down to 111 – 115 degrees. Stir from time to time to prevent skin forming. You can cool it down faster by putting the pot in cold water with ice.
Mix 1 cup of milk from the pot with the yogurt, then add the mixture in the pot, stirring slowly with a whisk.
Cover the pot with a lid and then with cloth kitchen towels to keep it warm, at a constant temperature of about 110 degrees. Put it in the oven without turning it on and leave it for about 4 hours for the yogurt to form. The more you leave it, the thicker and sourer your yogurt will get. Don’t mix until it’s not well bound.
Once you are satisfied with its taste and consistency, remove the whey on the surface and whisk the yogurt it before pouring it into some covered containers. It will stay fresh in your fridge for 2 weeks.
