Preparation:
Season the chicken with pepper, salt, paprika, turmeric, herbs, garlic and ginger.
Remove the seeds and then sprinkle the quinces with sugar.
Place the chicken and quinces in the baking tin, sprinkle with oil and bake.
They can be served with horseradish sauce and sauteed vegetables.

2.2 lb of small quinces
3 – 4 red apples
3.3 lb of sugar

Preparation time: under 1h30min

Preparation:
Slice the quinces into quarters, put them in a pot along with the apples, also quartered.
Add ¼ gallon of water over the fruits and let simmer. When the quinces are softened (try this with a match), filter the juice through gauze, without crushing the fruit. Let the juice clear for about 20 min, then filter it again until it is very clear.
Blend the 3.3 lb of sugar into 1/4 gallon of juice. Leave them in a pot for 20 min. for the sugar to melt.
Then boil, carefully removing the foam. Let it boil until it hardens.

3.5 lb of quinces
1/2 lb of sugar
1/4 lb of raisins
1/4 lb of walnuts
Rum

Preparation time: 35 min.

Preparation:
Clean the quinces and cut them in little cubes. Boil them in water. When they soften add the sugar and boil until the juice reduces and the mixture caramelizes.
Add the raisins, previously soaked in rum, the crushed nuts and boil for another 15 minutes and mix continuously so they do not stick to the pot.
Let it cool a bit, then pour the composition on cellophane. Roll it in, tie at the ends and let it cool.

Preparation:
Wash, peel and cut the quinces into thin slices. Remove the seeds and spine. Put the slices in the water mixed with sugar and simmer for about 50 minutes. They mustn’t boil. Filter the juice through gauze into another pot. Then let the mixture simmer again until it boils. Pour the syrup into pre-heated bottles and seal them well immediately.

2 quinces and the juice of one lemon
4 oz sugar
3.3 oz of water
Salt
3 eggs
5.5 oz of flour
1 teaspoon baking powder
2 spoons milk
5 chopped mint leaves (optional)
Powdered cinnamon and sugar

Preparation time: 35 min.

Preparation:
Peel and cut the quinces into pieces, sprinkle with the lemon juice, add the water and 2.5 oz of sugar and boil this mixture. For an increased aroma you can add a cinnamon roll. Filter and let the fruit pieces cool down.
Mix the eggs with the remaining sugar, the salt, the mint, the flour and the baking powder. Add the milk and the quinces. A soft dough will result.
Using 2 spoons take small amounts of dough and boil them in hot oil. They swell and fry rapidly so have a plate and absorbing paper ready for them.
Roll in sugar and cinnamon mixture while hot.
