Strawberry Tart Recipes. Season’s Delights in the Finest Creams

It’s strawberry season and it won’t last long, so it’s up to you to savor those locally grown beauties in as many ways as you can: plain, with whipped cream or yogurt or in elaborate desserts. Here are three strawberry tart recipes to enjoy with your whole family.

Strawberry tart recipes. Sour cream souffle

Ingredients:

  • 200 grams white flour + 3 tablespoons for the souffle
  • 100 gr butter
  • 150 gr sugar + 1 tbsp
  • 4 eggs
  • 300 gr sour cream
  • vanilla essence
  • 500 gr strawberries

Directions:

Dice the cold butter and blend it well with the flour (using a blender or your bare hands). Add 1 egg and 1 tbsp of sugar and keep blending. You’ll obtain that dough texture and shape it into a ball. Cover it with some plastic foil and leave it in the fridge for 30 min.

Meanwhile, wash the strawberries, remove the stems and leaves and prepare the sour cream souffle. In a bowl, mix 3 eggs, 3 tbsp of flour, 150 gr sugar, the sour cream and vanilla essence.

Take out the dough, stretch it out with a rolling pin and put it in a tall baking tray with loose base, 11 – 12 inches in diameter. The margins of your dough should go up about one inch on the walls of the tray. Place the strawberries cut in halves or quarters on the dough. Pour the sour cream mixture and put the tray in the oven, heated at 400 degrees for 40 minutes. Take it out, let it cool down and remove the tray. Best served cold.

Ingredients:

  • 1 tart cake
  • 250 gr mascarpone
  • 200 ml sour cream
  • 2 -3 tbsp powdered sugar
  • vanilla essence
  • 250 gr strawberries
  • 2 – 3 tbsp comfiture

Directions:

Whip the mascarpone and sour cream, adding the sugar, a pinch of salt and the vanilla essence, until you obtain a thick and fluffy whipped cream. Spread it on and inside the cake and decorate with the sliced strawberries. Place them from the margins inwards, slightly overlapping them for a nice look.

Place the comfiture on the fruit (it can be strawberry or other fruit, like sour cherry or apricots). It will make them shiny and prevent oxidation.

Serve the tart after cooling for at least 4 hours.

Ingredients:

For the cake:

  • 100 gr butter
  • 1 egg yolk
  • 250 gr flour
  • 60 gr brown sugar
  • 2 tbsp black cocoa
  • 1 pinch of salt

For the chocolate cream:

  • 200 gr black chocolate
  • 300 gr plain yogurt
  • 1 egg yolk
  • 40 gr brown sugar

For the topping:

  • 800 gr fresh strawberries
  • 100 gr frozen berries
  • 3 tbsp brown sugar
  • 1 tbsp starch
  • 1 small cup of water

Directions:

Let the ingredients sit at room temperature for a few hours. Whip the butter with a pinch of salt and the sugar. Add the egg yolk and keep whipping. Add the flour mixed with the cocoa and blend everything until you get a crumbling dough.

Use a loose base baking tray. Place the dough in it and level it. Leave it in the fridge while you make the chocolate filling.

Melt the chocolate on a bain marie. Let it cool down a bit. In a bowl, blend the yogurt, sugar and egg yolk. Then we add the chocolate and blend. We take out the tray from the fridge and pour in the chocolate filling. Put it in the pre-heated oven, over a medium fire, for 40 – 45 minutes. When it’s done it will be slightly swollen and form a crust. We take it out and let it cool down.

Use a whip to mix the water with 3 tbsp of sugar and the starch. Put it to boil whipping continuously until it thickens. When it’s well thick, put it aside.

Scatter the frosted berries (blue and blackberries maybe) over the fresh strawberries. Pour the starch mixture over them and mix. This will keep the fruits together and tasting fresh. When the chocolate cake is cold, add the fruit topping, sprinkle some chocolate chips and put it in the fridge for a few hours.
