Ingredients:

For the dough

  • 500 gr white flour
  • 250 gr butter or 100 gr butter + 100 gr lard
  • 125 gr powdered sugar
  • 2 packs vanilla flavored sugar
  • 2 eggs + 3 yolks (one for coating)
  • 2 tbsp sour cream
  • lemon zest
  • a pimch of salt

For the filling

  • 2 kilos sweet-sour apples
  • 200 grsugar
  • 1 tsp cinnamon
  • lemon zest
  • 60 gr walnuts

Instructions:

Batter all the ingredients for the dough. If you use the robot, put half the flour quantity first (butter has to be cold and chopped in cubes), then, as you mix, add the rest of it. If you do it manually, mix the flour and butter first, then add the rest of the ingredients and batter quickly. You should avoid getting it warm.

Separate the dough into two parts, one slightly bigger (the first sheet, and put each in plastic foil. Keep them in the fridge for one hour.

For the filling, wash the apples well and grate them. Toast the nuts and mince them.

Take the bigger chunk of dough out of the fridge and stretch it directly on the parchment paper you use on your tray. It should also cover the walls of the tray. Pinch the dough with a fork, so it doesn’t get bubbly as it bakes.

Place the nuts, cinnamon and lemon zest on it. Squeeze all the juice out of the apples, the children will enjoy drinking it. Then place them on the tray evenly. The next layer is the sugar, then some more cinnamon. Finally place the other dough sheet on top and pinch it with a fork. Spread one egg yolk on it.

Bake the pie at 170°C for 50 minutes. When it’s ready, sprinkle powdered sugar o it.
